Tidebreak Brew Guide
A bright, attentive pour-over
Before the day gathers speed, make a little room for the cup.
This recipe is designed for Tidebreak's seasonal character: a clean, lively brew that changes as it cools.
You'll need
- 20g Tidebreak coffee
- 320g fresh, filtered water
- Pour-over brewer and paper filter
- Grinder, scale, timer, and mug
- Target ratio:
- 1:16
- Brew time:
- 2:45–3:15
- Water temperature:
- 94°C / 201°F
- Grind:
- Medium-fine, a little finer than table salt
The recipe
- Warm and rinse. Place the filter in the brewer and rinse it thoroughly with hot water. Discard the rinse water and set the brewer on the scale.
- Bloom. Add the grounds, level the bed, and pour 60g of water. Wait 40 seconds.
- First pour. Pour slowly in small circles to 200g, keeping the bed even.
- Finish. Top up to 320g and let the bed draw down. Swirl once, then let the cup rest a minute before tasting.
If it tastes off
- Thin or sour: grind a little finer, or pour more slowly.
- Heavy or bitter: grind coarser and shorten the finish.
